Required products :

for the cake :

  • 1 and 1/3 cups brown sugar
  • 3/4 cup butter, soft
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon powder
  • 1/2 teaspoon baking soda
  • 3/4 cup buttermilk
  • coconut oil (or cow's oil)

for apples :

  • 1 kg of apples (about 6 apples)
  • 1/2 cup brown sugar
  • 1 teaspoon cornstarch
  • 1/4 teaspoon cinnamon powder
  • pinch of salt
  • 2 tablespoons butter
  • apple sauce with caramel and brandy

Method of preparation :

the cake :

Preheat oven to 180 degrees. Beat the brown sugar and butter with a mixer until fluffy. Add the eggs one at a time, beating with each addition until homogenous. Pour the vanilla extract and stir.

In a bowl, mix the flour with the baking powder, salt, cinnamon and baking soda. Add the buttermilk and the flour mixture to the egg mixture, beating with a mixer until you get a thick mixture, which you distribute in a greased and floured round cake pan.

Bake for 35 minutes, then place aluminum foil on the pan and bake for another 15 minutes or until done. Remove the marshmallows from the oven and leave on a wire rack to cool completely.

apples:

Cut the apples into thin slices, mix them in a bowl together with 1/2 cup brown sugar, cornstarch, cinnamon and salt.

Melt 2 tablespoons of butter in a large skillet, add the apple mixture and sauté for 5-6 minutes or until golden brown. Cool completely for 30 minutes.

Arrange the sauteed apples on the cooled tray and garnish with warm caramel sauce with apple brandy if desired. Cut the apple cake into pieces and serve.
