The classic apple pie is often first on the list of pastries in the fall and on cold winter days. Caramel emphasizes the sweetness of apples and makes them much more attractive. A piece of apple pie goes perfectly with a cup of coffee, tea or warm milk with cinnamon.

Required products :

for the base:

  • 3 cups flour + more flour
  • 1 cup butter, cut into small pieces
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 tablespoon apple cider vinegar
  • 6 tablespoons ice water (or more if needed)

for apple filling:

  • 1.5 kilograms of apples, peeled and thinly sliced
  • 1/4 cup dark brown sugar
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon cornstarch
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup caramel + more to serve
  • 1 egg beaten with 1 tablespoon of water

for serving: (optional)

  • sugar for sprinkling 
  • ice cream

* A tea cup is used to measure the quantities.

Method of preparation :

the basis

Put the butter and flour in the freezer for 30 minutes before you start making the base.

In a large bowl, mix the flour, sugar and salt. Add the butter and knead the mixture by hand until it forms pieces the size of a pea. Gradually add the apple cider vinegar and ice water 1 tablespoon until the dough begins to become moist and can collect, but not wet and sticky. The mixture should be crumbly.

Knead the dough on a floured surface, forming two balls of equal size and roll out.

Preheat the oven to 200 degrees and place a sheet of baking paper in the pan.

In a large skillet over medium heat, pour the apples, brown sugar, lemon juice, cornstarch, cinnamon and salt. Cook until the liquid thickens and the apples soften, or for about 12-15 minutes. Allow to cool as you roll out the dough.

Roll out one ball of dough in the shape of a circle with a diameter of about 30 centimeters on a lightly floured surface. Transfer to a 23 cm diameter pie tin and shape the dough, pressing it to the bottom and walls. Cut the rest of the dough at the edges. Pour the apple mixture on the base, then pour the caramel. 

Roll the second ball into a circle measuring 30 cm and cut 10 strips. Make a pattern of your choice using the strips. Put in the freezer for 15 minutes or until cool.

Spread the cooled pie with the mixture of egg and water and sprinkle with sugar. Bake in the preheated oven for about 50 minutes or until the crust is golden. If the surface begins to darken very quickly, cover the pie with foil.

Remove from the oven and allow to cool on a wire rack.

Serve the apple pie by sprinkling with caramel and / or ice cream if desired.
