Required products :

  • 1/2 cup coconut oil + coconut oil for spreading (or other)
  • 1 cup wholemeal flour
  • 1 cup flour for all purposes
  • 3/4 cup sugar
  • 1 tablespoon cinnamon powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 medium-sized carrots, grated
  • 1 apple, peeled and finely chopped
  • 1/2 cup raisins
  • 1 large egg
  • 2 large egg whites (or 4 teaspoons dried)
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon vanilla extract
  • 2 tablespoons walnuts, finely chopped (or pecans)
  • 2 tablespoons toasted wheat germ
  • honey for garnish (optional)

* A tea cup is used to measure the quantities.

Method of preparation :

Preheat oven to 190 degrees. Grease 18 muffin tins with coconut oil (or other).

Mix in a large bowl the wholemeal and flour for any purpose, sugar, cinnamon, baking powder, baking soda and salt and stir to homogenize. In another bowl, mix the grated carrots, finely chopped apple and raisins, then mix them with the flour mixture.

In a medium bowl, beat the eggs, egg whites, apple oil, olive oil and vanilla. Make a well in the apple-flour mixture and pour the egg inside. Stir with a rubber spatula until the mixture is homogenous. Pour the resulting dough into the prepared muffin tins, filling them about 3/4.

Mix the walnuts and roasted wheat germ in a small bowl and sprinkle the muffins with the resulting mixture. Bake in the oven for 15-25 minutes or until golden brown, then leave to cool for about 5 minutes.

Serve sprinkled with honey if desired.
