Necessary products

For swamps:

  • 50 grams of butter
  • 40 grams of vanilla rusks
  • 20 grams of ground almonds
  • 2 tablespoons sugar

For cream:

  • 250 grams of mascarpone
  • 150 milliliters of liquid cream
  • 60 grams of sugar
  • 3 sheets of gelatin
  • 1 lemon
  • 2 tablespoons apple juice
  • 1 tablespoon vanilla sugar

For jelly:

  • 190 grams of apples
  • 180 milliliters of apple juice
  • 50 grams of sugar
  • 3 sheets of gelatin
  • 3 tablespoons lemon juice

 

Method of preparation :

The basis

Put the rusks in a plastic bag and crush them finely with a rolling pin. Roast a little almonds and grind them, melt the butter.

Mix the products you have prepared, sweeten with sugar and mix everything. Spread the combination on the bottom of the form and press with your hands to make the base thick. Cover it with cling film and store the dish in the refrigerator.


The stuffing

Pour gelatin with water, squeeze the juice from the lemon and grate the peel.

Add both types of sugar (vanilla and regular), citrus juice and peel to the mascarpone, stir.

Heat the apple juice slightly, put the swollen gelatin in it, which you have previously drained from the water. Stir and allow to dissolve.

Then add a few spoonfuls of sweetened mascarpone with lemon, stir and combine with the remaining cream cheese. Whip the cream, pour it into the cream. Spread it on the base, which is already tight. Cover with cling film and allow to cool for a few hours.

Cut the apples into thin slices, stew them for three minutes in a mixture of a few tablespoons of lemon juice, apple juice and sugar.


Jelly

Fill the gelatin with water, after a while drain the liquid and dissolve in the apple juice, which you preheat.

When the mixture has cooled, combine with the apple pieces and pour over the cheesecake. Cover the dessert with plastic wrap and refrigerate for 3 hours.
