Required products :

apple puree - 800 grams

water - 1 liter

100 grams of honey or sugar

10 grams of yeast or 20 grams of dry rye bread

These are the quantities for 1 liter of water, you use the appropriate ones according to the amount you will make.

Method of preparation :

Wash the apples, remove the damaged parts, grate the rest on a coarse grater. Pour the resulting raw apple puree into a glass jar and dilute with 1 liter of warm boiled water. Put 100 grams of honey or sugar and 10 grams of yeast or 20 grams of dry rye bread.

During the first 10 days, the container in which you mixed the products is kept open at a temperature between 20 - 30 degrees, stirring with a wooden spoon 2-3 times a day. The slurry is then transferred to a gauze bag and drained of the liquid. The juice is filtered again through gauze and poured into a wide-mouthed vessel.

Honey or sugar are not required, and smaller amounts can also be added.

The vessel is covered with gauze, tied and left in a warm place to continue the fermentation, which ends after 40 - 60 days. The apple cider vinegar is then filtered and poured into bottles, which are tightly closed with corks. The product is stored in a refrigerator at a temperature of 6 - 8 degrees.
