Bake the apples whole and unpeeled in the oven until soft. Then remove the skins and seeds, and grind the inside, turning it into a puree, using a blender or other suitable device.
Mix the spices with the vinegar and place the combination on the stove to boil. Then add the salt and stir to dissolve.
Combine the fruit puree with the mustard, stirring thoroughly in the meantime so that no lumps form. Pour the aromatic vinegar, add honey and mix well again.
Transfer the resulting sauce to a glass jar, close it with a lid and store in the refrigerator. In three days the mustard will be ready for consumption.
