Necessary products

For the dough:

4 eggs
130 grams sugar
75 grams flour
50 grams starch

For the stuffing:

500 ml thick whipping cream
2 egg whites
100 grams sugar
4 medium apples
2 tablespoons lemon juice
2 packets vanilla sugar
grated lemon peel to taste

Method of preparation :

Separate the egg whites and yolks. Beat the egg whites to a froth (no sugar).

Beat the yolks with the sugar and 2 tablespoons of water.

Put the egg white foam on them, then the flour with the starch. Mix everything thoroughly.

Spread the dough in a bowl, the bottom of which you have covered with parchment or foil (you can just grease with oil). It is good for the tray to be large enough to make a thin tray.

Bake it for 20 minutes in the oven at a temperature of 180 degrees.

Remove on a clean towel and roll up a roll. Allow to cool.

Make the filling. Peel the apples, cut into pieces, remove the seeds and grate with a coarse grater. Sprinkle the fruit with the vanilla sugar, a little of the grated lemon peel and pour over the citrus juice.

Beat the pre-chilled cream with the sugar and both egg whites.

Unroll the roll, spread it with half of the cream, distribute the apples and form a roll again.

Spread the surface with the remaining cream and decorate with apple slices.

Enjoy your meal!
