Required products :

  • 1/2 cup blanched almonds
  • 1/3 tea cup sugar + more to sprinkle on the end
  • 1 egg
  • 4 tablespoons softened butter
  • 1/2 teaspoon almond extract (optional)
  • 1/2 teaspoon vanilla
  • pinch of salt
  • 1 tablespoon flour
  • 1 sheet of puff pastry (thawed to become flexible)
  • 12 apricots, halved

Method of preparation :

Grind the almonds with the sugar, add the egg and pulse several times. Add the butter, almond extract, vanilla and salt. Grind until smooth.

Roll out the dough and put it in a tray (if it is difficult to work with, put it briefly in the refrigerator or freezer to firm up), pierce it with a fork.

Apply the almond cream on the cake, arrange the apricots with the cut part on top. Sprinkle with a little sugar.

Bake for 15-20 minutes at 210 degrees, then reduce the temperature and continue baking for another 15 minutes until the sugar crystals caramelize.
