Necessary products:
4 eggs
100 g of sugar
70 - 75 g flour
30 g of starch
vanilla on the tip of a knife
pinch of salt
4 g gelatin
400 g apricots (canned)
2 tablespoons lemon juice
400 g of natural yogurt
peel of 1 lemon
50 g powdered sugar
250 ml sour cream
Method of preparation:
Knead dough from eggs, flour, starch. Add the vanilla and a pinch of salt. Cover the bottom of the pan with parchment paper and pour the dough, forming an even layer. Bake in the oven at 180 degrees for about 7-8 minutes. Pour the sugar on a dry towel, place the warm loaf on top, roll up and cool.
Make the filling. Pour the apricots in a blender and grind them into a puree. Add lemon juice and gelatin to them. Whip the cream with a fork, mix the yogurt with the powdered sugar, combine with the fruit. Add the lemon zest. Unroll the roll, spread it with the resulting cream and roll again. All you have to do is put it in the fridge for a while and then enjoy the great taste.
