How To Cook Arancini - Breaded Italian Rice Balls With Bacon And Mozzarella - Recipe

Required products :

  • 1.2 liters of chicken broth
  • 120 grams of bacon
  • 20 grams of basil
  • 150 grams of parmesan
  • 2 teaspoons breadcrumbs
  • marinara sauce to taste
  • 500 grams of Arborio rice
  • 230 grams of mozzarella
  • 6 eggs
  • 2 teaspoons flour
  • oil

 

Method of preparation:

Pour the broth into a large saucepan and bring to a boil over high heat. Then pour the rice and reduce the heat. Let the beans cook for 15 minutes (until al dante), without putting a lid on the dish.

Drain the remaining liquid and pour the rice into a pan and distribute an even layer of it. When cool enough, refrigerate overnight.

Bake the bacon in a pan and chop finely. Turn the mozzarella into cubes, chop the basil.

Transfer the cold rice to a deep bowl and add 3 eggs, grated Parmesan cheese and stir. Prepare a container with water in which to wet your hands when forming the balls.

Take a handful of rice, make a hollow in the middle and put a cube of mozzarella, a little basil and bacon. Cover the stuffing with more rice and shape into a ball.

Continue in the same way, and arrange the shaped arancini in a tray.

Pour the flour into a bowl, beat the remaining 3 eggs in a separate bowl and place the rusks in a plate.

Roll the rice balls in flour, then dip them in the eggs, finish the breading with breadcrumbs and fry the appetizer in very hot oil.

About 4 minutes are needed, and the fat should completely cover the currents.

When the coating turns golden, remove the rice temptation from the oil using a slotted spoon.

Arrange on a tray, the bottom of which you have covered with paper (its role is to absorb unnecessary fat).

Serve with marinara sauce.
