In a saucepan, heat the fat and fry the onions, potatoes, ribs and paprika. Stir and season with salt, pepper, cumin, bay leaf and thyme stalk.
Pour 1 tea cup of water, wine and simmer for an hour. When ready, pour portions, garnish with a sprig of fresh thyme and serve the dish warm.
