Method of preparation:
Divide the head of garlic into cloves, peel and cut each of them crosswise in half. Take a sterilized glass bottle, put the garlic in it and close. Heat olive oil to 180 degrees in a small saucepan and carefully pour into the garlic bottle. Important: do not use a plastic funnel when adding olive oil. Seal the bottle and leave in a cool place for about 1 week, but not in the refrigerator.
In order not to spoil the spice after the specified time has elapsed, pour it into another sterilized bottle, strain through several layers of gauze / cheesecloth and seal well again.
Ready-made garlic olive oil, prepared according to a classic recipe, is stored in a refrigerator or cellar, but never at room temperature.
