How To Cook Aromatic Lamb With Garlic And Rosemary (in The Oven) - Recipe

Required products :

  • 1.8 kilograms of lamb
  • 6 cloves garlic
  • 12 sprigs of rosemary 2 cm long each
  • 50 milliliters of olive oil
  • coarse salt and ground black pepper


Method of preparation :

Turn the oven to preheat to 200 degrees while you prepare the meat and spices.

Separate the leaves from half the rosemary stalks and cut them into small pieces. Chop three of the garlic cloves as well. Mix the two products with olive oil and leave for 10 minutes so that the fat absorbs their aromas.

Cut the remaining cloves lengthwise into four and roll in salt, moisten the rosemary with water and also salt.

Using a sharp knife, make small holes in the meat and distribute the stalks and cloves in them (this way the lamb will taste inside).

Add salt to the meat on the outside, sprinkle with black pepper and spread with aromatic olive oil (do not separate the spices).

Wait five minutes and then put the lamb in a pan, cover with aluminum foil and place in the already hot oven for an hour and a half.

Then reduce the temperature to 170 and remove the foil sheet. Let the dish bake for another half an hour, until a toasted crust forms on the surface.

When you take it out of the oven, cover it again with foil and let the lamb rest for 10 minutes.

A suitable addition is a garnish of baked potatoes.
