Necessary products:

 

  • 500 grams of onions
  • 1 teaspoon paprika
  • 4 soft tomatoes
  • salt and pepper to taste
  • 2-3 bay leaves
  • 2 cloves garlic
  • 3-4 stalks of fresh thyme
  • 3-4 sprigs of fresh parsley
  • 2-3 grains of allspice
  • 100 milliliters of red wine
  • 1 tablespoon butter

 

Method of preparation:

 

Pour water into a saucepan, add thyme, parsley, allspice, garlic, bay leaf and bring the liquid to a boil.

 

In this way the broth will be flavored and the soup will be more fragrant. Using a slotted spoon, remove the spices, strain the broth and set aside. In the same pan put 1 tablespoon of butter and stew the onion cut into crescents.

 

Grate the tomatoes on a fine grater and add them. Add the red, black pepper and salt. Pour the wine, part of the broth and add the onion. Let the soup simmer on low heat for an hour.

 

Distribute portions and serve warm, garnished with bread or croutons.
