Method of preparation :
Preheat oven to 180 degrees.
Cut the red potatoes thinly with a grater. In a large bowl, place the potatoes, sprinkle with salt, pepper and cream.
Grease a deep metal bowl with plenty of oil. Arrange the sliced red potatoes in the form. Make sure that each slice is well adhered to the walls of the container. Follow the round shape, starting from the center and continuing upwards.
Pour the yellow potatoes into the cream mixture after you have arranged all the red potatoes. Once marinated, place two or three rows of potatoes on the bottom of the dish. Arrange 2 rows of cheddar on top.
Then again 3 rows of potatoes and put the whole bacon, arranging the slices tightly next to each other. Two more rows of potatoes follow. Sprinkle with chopped green onions and arrange two more layers of potatoes. Put the remaining cheddar and again two rows of potatoes.
Cover with puff pastry the dough, cut to the diameter of the last row of potatoes.
Bake in the oven for 1 hour and 30 minutes, if the dough or potatoes start to burn, cover with foil. Allow the finished dish to cool completely in the form.
While the dish is baking, prepare the sauce:
Use the cream left over from marinating the potatoes. Add garlic powder, grated Parmesan cheese and onion powder. Cook over medium heat until the sauce thickens. Set aside to serve.
When the pastry has cooled, turn it over on a wire rack. Bake at 200 degrees for another 10 minutes until the potatoes are golden and crispy. Serve the dish with the sauce and sprinkle with a little green onion.
