Required products :

3-4 pears (600 grams), cleaned of the core with the seeds and cut into quarters
2 tablespoons olive oil
10 teaspoons balsamic vinegar
salt and ground black pepper to taste
1 small onion
1/2 teaspoon sugar
120 grams arugula leaves
120 grams lettuce leaves
parmesan, thinly sliced ​​using a potato peeler
3 tablespoons nuts (pecans, brazil or common walnuts, hazelnuts), baked in a dry pan

Method of preparation :

Sprinkle the pear pieces with 1/4 teaspoon of salt and ground black pepper.

Heat 2 teaspoons of olive oil in a pan over medium heat. When it starts to smoke, put the fruit in a row with the cut side down and let it fry for 6-8 minutes, then turn.

 

 

Turn off the heat and pour 6 teaspoons of balsamic vinegar. Stir thoroughly. The liquid should thicken and the fruit should be covered with a thin layer of glaze (it takes about 30 seconds).

Remove the pears to a plate and leave for about 45 minutes to cool. Then cut them into pieces 1.5 cm thick.

Beat the remaining olive oil with the vinegar in a bowl, add the onion and sugar. Add the arugula leaves and lettuce, the pear pieces and stir. Season with salt and ground black pepper.

Transfer to a plate, put the pieces of parmesan and sprinkle the salad with crushed nuts of your choice.
