How To Cook Arugula Salad With Pork, Pear And Blue Cheese - Recipe

Roasted walnuts combined with pork and pears make this salad elegant and extremely interesting. It is easy to prepare and tastes surprisingly amazing.

Necessary products:

  • 2 tablespoons walnuts, crushed
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 2 teaspoons fresh rosemary, chopped (or 3/4 teaspoon dried)
  • 1 clove garlic, chopped
  • salt and pepper to taste
  • 450 grams of pork fillet
  • 8 tea cups arugula
  • 4 small or 2 large red pears, cut into thin slices
  • 1/4 tea cup blue cheese, crushed

Method of preparation:

Preheat oven to 200 degrees. Cover the bottom of the pan with baking paper.

Roast the walnuts in a pan over medium heat, stirring often, until golden and fragrant.

Mix in a bowl the balsamic vinegar, lemon juice, honey, mustard, rosemary, garlic, salt and pepper to taste.

Put the pork in the prepared pan, spread with 1-2 tablespoons of the dressing and season with salt and pepper. Bake for 20-22 minutes or until soft and well cooked. Once slightly cooled, cut into slices.

Mix the arugula, pears and dressing in a large bowl and stir. Divide the salad, pork, shredded feta cheese and roasted walnuts into four plates and serve.
