Method of preparation:
Boil the pasta in salted water, cool it in cold water and set aside. Make the dressing by mixing all the ingredients in a blender or bowl and mix until homogeneous.
Drain the pasta and place in a large bowl, to which add oil, soy sauce, grated carrots, purple cabbage, peppers, broccoli and green onions.
Season the salad with peanut sauce, stir and add the diced tofu. Serve the salad cold, garnished with chopped fresh coriander.
