Asparagus, spinach, garlic, olive oil ... this delicious soup combines many useful ingredients for the body. The products are for 4 servings , and the preparation will take you only about 30 minutes .

 

Necessary products

  • 400 grams of asparagus
  • 2 handfuls of spinach
  • 3 shallots (you can also use red onions)
  • 2 minced garlic cloves
  • 700 milliliters of vegetable broth
  • 25 grams of butter
  • 1 tablespoon oil
  • a little olive oil to sprinkle

 

Method of preparation

Pre-clean the asparagus and separate the tops from the stems. Cut the stems into small pieces.

Put a large saucepan on the stove and heat the butter and oil in it. Fry the tops of the asparagus inside for a few minutes until soft. Take them out and set them aside.

Pour onion, asparagus stalks and garlic into the pan. Fry them for 7-8 minutes, then add the spinach. Pour the broth, bring to a boil and simmer for a few minutes.

Remove from the heat and beat with a blender until a thick cream soup is obtained. Add the fried asparagus tops to it and sprinkle with a little olive oil. Enjoy your meal!
