Required products :

  • 600 milliliters of whole milk
  • 3 teaspoons vanilla extract
  • 60 grams of skimmed milk powder
  • 4 egg yolks
  • 90 grams of sugar

Method of preparation :

Heat the milk in a saucepan, along with a spoonful of vanilla, two teaspoons of sugar and powdered milk. Stir to combine all products, simmer for 5 minutes, then remove from the heat and set aside while you prepare the remaining products.

Beat the eggs with the vanilla and sugar for 10 minutes with a mixer until a fluffy and creamy mixture is obtained.

Cool the mixture in the freezer for 10 minutes until it hardens slightly.

Heat the milk slightly, but be careful not to moan too hot. Carefully start adding it to the eggs, using a mixer turned on at medium speed. Do not rush this process, but add the liquid gradually.

Return the egg cream to the saucepan and cook over low heat, stirring constantly, until the cream thickens.

Pour the cream into a cold bowl placed on ice cubes and stir until the mixture has cooled enough. Put in the freezer for 30 minutes.

After this time, beat the mixture with a mixer or wire whisk. Do this three to four times every 30 minutes after storing in a refrigerator with a well-placed lid.

Remove from the refrigerator 10 minutes before serving.
