Required products :

  • 1/2 cup raw quinoa, rinsed and drained
  • 1 teaspoon water
  • 2 avocados, cut into cubes
  • 1 red grapefruit, peeled and sliced
  • 1/4 cup pistachios, chopped in bulk
  • 1 lime, freshly squeezed
  • 1 tablespoon honey
  • 1/2 teaspoon ginger, finely ground

Method of preparation :

 

  • Pour the quinoa into a small saucepan, fill it with water and turn on the stove to medium heat.
  • Once the mixture boils, reduce the temperature and simmer for about 12-15 minutes until the seeds absorb the water.
  • Remove from the heat, stir with a fork and allow to cool completely.
  • In a large bowl, combine the avocado, grapefruit and pistachio pieces.
  • Sprinkle with lemon juice, honey and ginger.
  • Add the chilled quinoa and mix gently.
  • Divide the avocado salad into bowls and serve.
