How To Cook Baby Potatoes With Milk Sauce And Lemon Dressing - Recipe

Required products :

For potatoes :

  • 1 kg of baby potatoes / or small potatoes /
  • 1/4 tea cup olive oil
  • 3 cloves garlic, peeled and halved

For the dressing :

  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon fresh thyme leaves, chopped
  • 2 lemons, peel
  • sea ​​salt
  • freshly ground black pepper

For the milk sauce :

  • 1/2 teaspoon mayonnaise
  • 1/2 teaspoon yogurt
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, pressed
  • 1/4 tea cup chopped herbs / thyme /
  • salt and pepper

Preparation :

For the potatoes :

  • Put the baby potatoes in a deep saucepan and cover with cold water.
  • Cook over medium heat until soft (about 20-25 minutes).
  • Pour them into a colander and wait for them to drain, then arrange them on kitchen paper to dry completely.
  • Gently press the potatoes with the palm of your hand and lightly mash them.
  • In a large non-stick skillet, heat the olive oil over medium heat and add the garlic.
  • Stew it for about 1 minute until browned and remove with a slotted spoon.
  • Add the potatoes to the garlic olive oil and let them fry without stirring. Cook for about 5-8 minutes.
  • When they turn golden brown, turn them over and sprinkle again with olive oil if necessary.

For the dressing :

  • In a suitable bowl, mix olive oil, lemon juice, parsley, thyme and grated lemon peel. Season with salt and pepper to taste.
  • Sprinkle the dressing over the potatoes and gently shake the pan to cover them completely.
  • Season with salt and pepper to taste.

For the milk sauce :

  • In a deep bowl, mix the mayonnaise with the yogurt and mix well.
  • Add the lemon juice, garlic, thyme, salt and pepper and stir again.
  • Allow the sauce to stand for at least 30 minutes to unleash the aroma of thyme.

Serve the potatoes warm, garnishing them with the milk sauce.
