Learn how to cook "Baked bean pate with garlic, hot pepper and parmesan". Delicious recipe.
Required products :
1 teaspoon dried beans (best red)
1/2 red onion
2 cloves garlic
1/2 teaspoon cumin
1/4 teaspoon
oregano pepper to taste
1 bay leaf
For the pate :
2 tablespoons olive oil
1/2 onion
1 teaspoon broth left over from cooking beans
1/4 teaspoon ground black pepper
1/4 teaspoon sour cream
1 teaspoon salt
hot pepper (add as much as you like)
1 / 3 teaspoons grated parmesan or cheddar
1 tablespoon chopped coriander
chips to serve
Preparation :
Fill the beans with water and let stand overnight, onion and garlic cut into large pieces.
Pour the beans into a saucepan, pour enough water to cover it by about 5 centimeters, put the chopped onions and garlic, black peppercorns, cumin, oregano to taste and 1 bay leaf. Put on high heat and bring to a boil. When this happens, reduce the temperature and let it cook for an hour - an hour and a half until it softens. Be sure to remove the foam that has formed.
Drain the water, save 1/2 tea cup for the pate. Remove the peppercorns and
bay leaf. Allow the beans to cool.
Next is the making of the pate. Preheat oven to 175 degrees.
Heat olive oil over low heat, add finely chopped onion, close the pan with a lid and let it simmer for about 5 minutes. Remove the lid, increase the temperature to medium. Fry the onion, stirring often, until it turns brown (about 8 minutes). Then remove the pan from the heat and allow the onion to cool slightly.
Mix in a blender onion with olive oil, beans, finely chopped hot pepper, ground black pepper, cream and salt. Pour about 1/3 cup of bean broth and beat all products until smooth. You can change the density by adding more or less broth or cream. Use salt and pepper to taste.
Transfer the pate to a pan, sprinkle with grated cheese and cover with foil. Place in a preheated oven for about 5 minutes. Then remove the foil, increase the temperature and leave the dish in the oven for a few more minutes to bake and acquire a pleasant color on the surface.
The bean paste is ready, sprinkle with chopped coriander (or parsley) and serve with chips.
