Required products :

  • 500 grams of white beans soaked overnight
  • 1 onion, chopped
  • 2 cloves garlic, finely chopped
  • 6 tablespoons olive oil
  • 1/2 teaspoon sweet red pepper
  • 1 tablespoon tomato paste
  • 400 grams of canned tomatoes, drained and sliced
  • 1 teaspoon salt
  • freshly ground black pepper to taste
  • 350 grams of spinach, washed and drained
  • a small handful of fresh parsley, chopped
  • a small handful of fresh mint, chopped

Method of preparation :

  • Drain the soaked beans, transfer to a saucepan, cover with fresh water and heat over high heat until boiling.
  • Reduce the heat and simmer the beans for about 1.5-2 hours or until completely cooked.
  • Saute onion and garlic in 2 tablespoons olive oil in a large skillet over medium heat for about 5 minutes until softened.
  • Add red pepper, tomato paste, chopped tomatoes, 100 milliliters of water, salt and pepper.
  • Once the mixture boils, reduce the heat and simmer for about 30 minutes.
  • Add the spinach, stir and remove from the heat.
  • Drain the beans and transfer to a saucepan. Add the spinach mixture, parsley and mint and sprinkle with 2 tablespoons of olive oil.
  • Mix well, sprinkle with the remaining 2 tablespoons of olive oil and bake in a preheated oven to 160 degrees for about 35-40 minutes.
  • Serve beans warm with freshly baked bread and cheese.
