How To Cook Baked Cauliflower With Cranberries And Onions - Recipe

Required products :

  • 2 medium heads of cauliflower, cut into roses
  • 1 large red onion, cut into large slices
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 1/2 teaspoons fresh or frozen cranberries
  • 1/4 teaspoon balsamic vinegar
  • 1/4 tea cup of honey
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh mint

Method of preparation :

Preheat the oven to 220 degrees. Put the cauliflower and onion in a pan, pour olive oil and 1/2 teaspoon of salt. Stir and bake for 30 minutes until the vegetables are soft. In the middle of baking, add the blueberries - after the 15th minute.

Meanwhile, in a saucepan, mix the balsamic vinegar, honey, salt and pepper. Simmer for 10 minutes until the mixture is reduced.

Transfer the roasted vegetables to a plate, pour over the dressing and when serving sprinkle with mint leaves.
