Required products :

2 large red onions

1 large red pepper

4 - 5 large tomatoes

olives (black and / or green) to taste

250 grams of cheese

100 milliliters of olive oil

green peppercorns or other spices of your choice

juice of 1/2 lemon

Method of preparation :

Cut the onion into large semicircles, the pepper into strips, the tomatoes into quarters (they must be firm so that they do not become a mush when roasted).

Pour the vegetables into a pan, pour the lemon juice, add freshly ground black pepper if desired. Cut the cheese into several pieces and put it on the vegetables, pour olive oil. Cover with foil and bake in the oven at 220 degrees for 30 minutes. Then remove the foil and return the dish to bake for another 15-20 minutes until an appetizing crust forms.
