Required products :

for swamps:

  • 250 grams of butter - at room temperature
  • 1/2 teaspoon brown sugar
  • 1 can of 400 grams of pineapple in circles (save 1/8 tea cup of juice)
  • 20 cocktail cherries
  • 3/4 tea cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons flour
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sour cream

for cream:

  • 2 teaspoons cream cheese
  • 2 cans of 400 grams of condensed milk
  • peel and juice of 1 lemon
  • 2 teaspoons vanilla extract

Method of preparation :

Line 2 baking trays with a diameter of 22 cm with baking paper and grease.

Mix 125 grams of butter with the brown sugar until a cream is obtained. Divide the resulting mixture between the two trays and grease the bottom. Arrange the pineapple on top. Put the cherries in the pineapple ring and where there is space between the slices.

In a bowl, mix the remaining butter and sugar. Add the eggs one by one and add the vanilla. Add the flour, salt, baking powder and baking soda. Mix well and add the sour cream and pineapple juice, stir again until you get a smooth cake batter.

Divide it between the two trays and smooth it with a spatula. Bake for 30-35 minutes until the tops are browned. Allow the cake to cool to room temperature for 15 minutes.

In a bowl, whisk the cream cheese until creamy. Add the condensed milk, lemon zest and juice, and the vanilla.

 

Pour the cream on one tray and flatten. Put in the freezer for 1 hour. Then remove and place the second pineapple loaf on top of the cream. Refrigerate for 3 hours before serving.
