Pour 125 milliliters of water into a suitable container, add butter, sugar and salt. Place the mixture on a very hot plate and stir constantly with a wire whisk until the combination boils.
Do not remove the pan / bowl from the heat, but pour the flour into it (all at once, not in stages) and stir until the dough begins to separate easily from the walls of the bowl.
Then you can remove from the heat and without stirring, add the egg yolks.
If the dough is too thick, you can use another 1-2 egg yolks. The consistency you need to achieve needs to resemble thick cream (the dough should run down the whisk when you take it out of the mixture).
Sprinkle a little flour on the bottom of the pan. Preheat oven to 180 degrees.
Using a pastry syringe, spread the dough in the prepared bowl, forming circles. Place them at a distance of 3-4 centimeters from each other.
Bake for fifteen minutes in the oven and remove the pan from it when ready.
Heat the cream without letting it boil. Beat the yolks, starch and powdered sugar together. Without stopping the process, pour the hot cream and put the dish on low heat. Let the cream prepare until it thickens, beating all the time.
Then fill the donuts with it.
To make the glaze, put the dark chocolate and butter in a bowl and place in another (larger) one with hot water. It takes a few minutes to melt the chocolate and mix it with the butter. With this combination, "paint" strokes on the surface of the donuts, wait for the decoration to cool and harden, and then you can serve.
