How To Cook Baked Fresh Potatoes With Garlic Avocado Sauce - Recipe

Required products :

  • 700 grams of fresh potatoes
  • 2-2.5 tablespoons olive oil
  • 1 teaspoon garlic powder
  • medium connection parsley
  • salt and freshly ground pepper (black)

For the sauce:

  • 1 large avocado
  • 2 cloves garlic
  • 1/2 tablespoon lemon juice
  • 60 milliliters of olive oil
  • fresh parsley
  • salt and pepper

 

Method of preparation :

Wash the potatoes, boil them until ready and put them in a greased pan without peeling.

Make the sauce.

Cut the avocado into two parts, remove the stone, peel the fruit and cut it into pieces and put in a blender. Add the peeled garlic cloves, pour the lemon juice, season with salt and pepper and grind to a puree.

Pour olive oil into it in a thin stream, whipping in the meantime to make the sauce smooth and homogeneous.

Turn on the oven to preheat to 200 degrees.

Squeeze the bottom of each potato with a glass until it bursts and pour a teaspoon of olive oil. Sprinkle with salt and garlic powder, then bake in the oven for about 25-30 minutes until a golden crust forms on the surface.

When you take out the potatoes, sprinkle them with chopped fresh parsley and freshly ground black pepper. Serve immediately with avocado sauce.
