Wash, dry and place the fish in a pan greased with olive oil. Season with salt and pepper. Put chopped parsley, garlic and olive oil in a blender. Beat until smooth and add the breadcrumbs, red pepper and lemon zest.
Stir with a spoon and spread the mixture over each fish. Pour the wine into the pan, add 1-2 tablespoons of olive oil and preheat the oven to 190 degrees.
Bake the dish for 40 minutes, cool and serve the mackerel in a plate. Garnish with lemon slices and sprigs of fresh parsley or spices of your choice.
