Necessary products
For the dough:
3 teaspoons fresh milk
3 eggs
3 teaspoons sugar
1 kg of flour
6 tablespoons vegetable oil
1/2 teaspoon baking soda
1 teaspoon lemon juice
For the stuffing:
300 grams of yellow cheese
50 grams of butter
2 tablespoons raw milk
4 eggs (yolks only)
1 teaspoon cooking cream with a fat content of 20%

Method of preparation :
Lightly beat the eggs with the sugar and a pinch of salt. With constant stirring, pour the milk, then add 900 - 950 grams of flour, oil, soda quenched in lemon juice. Knead a homogeneous dough, stirring with a wire whisk. Bake pancakes, lubricating the hot pan with oil before pouring the mixture for each. Grease the finished ones with oil.
Make the filling.
First, bake in a dry pan about 50 grams of flour until golden. Then add the butter and stir until smooth. Gradually pour in the milk, stirring constantly. Leave everything on a very low heat for 10 minutes, but do not allow the combination to boil. Stir periodically. Add salt to taste.
Beat the yolks and add them, pouring them into the other products in a thin stream. Do not stop stirring. Immediately after that, pour 150 grams of grated yellow cheese into the sauce and let everything cook for about 3 minutes, stirring.
From the resulting filling put 1 tablespoon on each pancake, spread evenly on the surface and roll.
Arrange the pancakes prepared in this way in a suitable pan, pour over the cream and sprinkle with the remaining grated yellow cheese.
Bake in the oven for about 5 - 10 minutes at a temperature of 160 - 180 degrees.
