Required products :

  • 100 grams of pasta
  • 2 cloves garlic, cut into thin slices
  • 5 teaspoons olive oil
  • 1 can of 400 grams of chopped tomatoes
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon mix Italian spices
  • 300 grams of mushrooms, chopped
  • 300 grams of frozen spinach, thawed and soured well
  • 6 eggs
  • 1 1/2 teaspoons grated carrots
  • 1 cup grated mozzarella
  • chopped fresh oregano if desired

Method of preparation :

Boil the pasta, drain and set aside.

Fry the garlic in 1 tablespoon of olive oil for 30 seconds. Add the tomatoes, a pinch of salt and pepper, season with 1/4 teaspoon of Italian spices. Stew for 5-8 minutes until most of the liquid has evaporated. Transfer to a bowl and set aside.

In the same pan, fry the mushrooms with 1 tablespoon of olive oil for about 5 minutes until the water released from them evaporates. Add spinach, 1/4 teaspoon salt, pepper and spice. Once the liquid has evaporated, transfer the mixture to a plate.

Preheat oven to 170 degrees.

Beat 2 eggs and add 1/3 of the carrots and 1/3 of the cooked pasta. Season with salt and pepper. Put the remaining 1 tablespoon of olive oil in the pan and fry the pasta and carrot mixture until the carrots are soft, without stirring. Turn with a plate and bake on the other side. Remove from the heat. In the same way, make 2 more "pancakes", using the remaining eggs, carrots and pasta.

In a small round pan, place a pancake on the bottom. Put the spinach mixture on the pancake, leaving a little space from its edges. Sprinkle with a little mozzarella. Put the next pancake and the whole amount of tomato sauce on top, leaving the edges again. Sprinkle with 1/4 tea cup of cheese. Finally, place the last pancake and the remaining cheddar.

Bake for 5-8 minutes until the cheeses are melted. Wait 10 minutes before cutting and serving.
