How To Cook Baked Potato Salad With Boiled Eggs And Mustard Sauce - Recipe

Required products :

  • 1 and 1/2 kg of mini potatoes
  • olive oil
  • salt and pepper to taste
  • 4 eggs, boiled
  • 65 grams of walnuts
  • 2 cloves garlic, chopped
  • 2 tablespoons mustard
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon honey
  • 1/2 teaspoon salt
  • 60 milliliters of olive oil
  • 3 green onions, finely chopped
  • handful of fresh basil leaves

Method of preparation :

Preheat oven to 220 degrees. Spread the potatoes on a baking tray lined with parchment paper. Drizzle with olive oil and season with salt and pepper to taste. Stir and bake for 35-40 minutes or until the potatoes are soft and browned. Remove from the oven and set aside to cool slightly. Mash the potatoes lightly with a fork and transfer them to a bowl.

Cut the boiled eggs into quarters. Crush the walnuts and pour them into the bowl with the potatoes.

Stir until smooth in a small bowl of garlic, mustard, lemon juice, vinegar, honey, salt and olive oil. Drizzle the potatoes with the dressing and stir. Sprinkle with green onions, basil and eggs. Stir gently and serve.
