This healthy recipe is made with pan-fried potatoes, bacon, cheddar cheese, sour cream and garlic. To make a vegetarian version of this potato soup, remove the bacon and use vegetable broth. Serve with lettuce and crispy bread.

Necessary products:

  • 1 tablespoon olive oil

  • 2 pieces of bacon, cut in half

  • 1/2 cup onion, chopped

  • 2 medium potatoes, peeled and diced

  • 4 cups chicken broth

  • 1/2 cup low-fat sour cream (or milk)

  • 1/2 cup grated cheddar cheese 

  • 1/4 teaspoon black pepper

  • 1/4 cup wild onion or green onion, chopped

* A tea cup is used to measure the quantities.

Method of preparation:

Heat olive oil in a pan over medium heat. Fry the bacon until crispy, then place it on paper to drain the fat.

Fry the onions in the same pan until soft. Add the potatoes and chicken broth and bring to the boil, then reduce the heat to keep cooking and cook until the potatoes are soft. 

Using a slotted spoon, transfer half of the potatoes to a bowl and mash until puree. Transfer them to the pan, add the sour cream, cheddar cheese and black pepper and cook, stirring, until the cheese melts.

Serve garnished with pieces of bacon, 1/4 cup cheddar cheese and chives (or green onions).
