How To Cook Baked Potatoes In A Spicy Tomato Sauce With Garlic And White Wine - Recipe

Required products :

  • 1 kg of potatoes
  • 5 tablespoons olive oil
  • salt to taste
  • 1 onion
  • 3 chopped garlic cloves
  • 100 milliliters of white wine
  • 2 tablespoons tomato paste
  • 400 grams of canned tomatoes
  • 2 teaspoons Tabasco sauce
  • 1 teaspoon ground red pepper
  • 1 teaspoon salt (for sauce)
  • 1 teaspoon sugar

 

Method of preparation :

Preheat oven to 200 degrees.

Peeled and sliced ​​potatoes add salt, pour 3 tablespoons of olive oil, stir and transfer to a pan (distribute them in a row) and bake until golden (about 50 minutes).

While the potatoes are cooking, work on the sauce.

Heat the remaining olive oil (2 tablespoons) over medium heat, pour the chopped onion and fry for 4-5 minutes, stirring constantly, until the edges begin to brown. Then add the garlic and fry for another 2 minutes.

Pour the white wine into the pot and let it boil over high heat. Once the amount is halved, add the tomato puree and mix well. Then pour the tomatoes (canned), Tabasco sauce, salt, sugar and red pepper. Stir again and reduce the heat. Let the sauce simmer over low heat until the potatoes are cooked through.

If desired, you can puree the finished sauce to obtain a uniform consistency.

Pour the prepared potatoes into the sauce and stew together for about 10 minutes.

You can serve as a side dish or as an appetizer.
