Preheat the oven to 200 degrees.
Make a cross with the tip of your knife in the potatoes. Grease them well with olive oil and arrange them in a pan, salt and bake for 45 minutes.
Fry the onion in small pieces for 3-4 minutes until golden and crispy, drain on napkins.
Finely chop the feathers of both types of onion and mix with cream, season with black pepper.
Allow the potatoes to cool for 10 minutes. Carefully squeeze the sides of the potatoes to dissolve, in the resulting space put the onion mixture and sprinkle with bacon.
