Preheat oven to 220 degrees.
Season the potatoes with 2 tablespoons of olive oil, garlic powder, salt and white pepper. Spread them evenly in 2 trays lined with baking paper. Bake for 20-25 minutes or until soft and browned.
Heat 2 tablespoons olive oil and fry the onion until soft and golden brown. Add the flour, season with salt and pepper, stir for 1 minute. Pour the almond milk, increase the heat and cook, stirring constantly, until the sauce thickens (about 3 minutes).
Spread the thickened sauce in the two pans with baked potatoes and sprinkle with paprika and sliced almonds. Bake in a preheated oven for 1 to 5 minutes or until the almonds begin to brown.
Cool for 10 minutes and serve the baked potatoes with fresh thyme if desired.
