How To Cook Baked Potatoes With Almond Milk And Almonds - Recipe

Required products :

  • 600 grams of fresh potatoes, cut into circles
  • 600 grams of sweet potatoes, peeled and cut into circles
  • 4 tablespoons extra virgin olive oil
  • salt and white pepper (or black pepper) to taste
  • 1/2 teaspoon garlic powder
  • 1 small onion, chopped
  • 3 tablespoons flour
  • 2 1/2 cups almond milk
  • 1/2 teaspoon sweet red pepper
  • 30-50 grams of sliced ​​almonds
  • 2 teaspoons fresh thyme

Method of preparation :

Preheat oven to 220 degrees.

Season the potatoes with 2 tablespoons of olive oil, garlic powder, salt and white pepper. Spread them evenly in 2 trays lined with baking paper. Bake for 20-25 minutes or until soft and browned.

Heat 2 tablespoons olive oil and fry the onion until soft and golden brown. Add the flour, season with salt and pepper, stir for 1 minute. Pour the almond milk, increase the heat and cook, stirring constantly, until the sauce thickens (about 3 minutes).

Spread the thickened sauce in the two pans with baked potatoes and sprinkle with paprika and sliced ​​almonds. Bake in a preheated oven for 1 to 5 minutes or until the almonds begin to brown.

Cool for 10 minutes and serve the baked potatoes with fresh thyme if desired.
