Wash the potatoes well (without peeling them), pour olive oil or butter over them, add salt and pierce with a fork in several places. Cover the bottom of the pan with aluminum foil, arrange the potatoes, preheat the oven to 220 degrees and bake them. It takes about 50-60 minutes to soften. Check the readiness with a fork.
Peel an onion and cut it into cubes. Wash the mushrooms under running water, cut them into pieces. Fry the onion in oil, then add the mushrooms and simmer for 30 minutes.
When the finished potatoes have cooled, cut them in half and form "boats", removing the inside.
Add the garlic, cream, grated yellow cheese (leave a little to sprinkle), chopped fresh parsley, salt and pepper to the mushrooms and onions. Stir.
Fill the potato boats with the resulting mixture, sprinkle with the reserved yellow cheese and put in the oven at medium temperature for 15 - 20 minutes.
