Wash the potatoes, remove the flakes with coarse salt and cut them into circles. Heat the butter and fry until semi-cooked. Drain and arrange the potatoes in a greased pan. Cut the garlic and sprinkle in several places.
Season with salt, red and black pepper. Mix the cream with the mustard, pour 3-4 tablespoons of water and add the flour. Stir and pour the mixture over the potatoes. Sprinkle with grated yellow cheese and parmesan.
Preheat the oven to 200 degrees and bake the dish for 20 minutes. Cool, sprinkle with chopped fresh onions and parsley. Distribute portions and serve.
