Cut all the vegetables that you have previously washed and cleaned of unusable parts. Mash the garlic and cut the mozzarella into small pieces.
Fry the eggplant in a little oil and take it out on a plate.
In the same fat, fry the onion together with the celery and carrot, then add the tomatoes, oregano, garlic and citrus peel.
Finally, pour the raw rice into the bowl. Let everything cook for 2 minutes.
Dissolve the tomato puree in the vegetable broth and pour the mixture over the other products. Add the aubergines, season with salt and pepper.
Transfer the contents of the dish to a greased pan, level the surface on which you spread the mozzarella.
Bake the dish for about 20 minutes in the oven at a temperature of 180 degrees.
