Required products :

  • 1 head of garlic
  • 2 tablespoons olive oil
  • 3 tablespoons + 1/4 teaspoon salt
  • 1,300 kilograms of potatoes
  • 5 tablespoons butter
  • 1/4 tea cup for cooking cream
  • 2 egg yolks

Method of preparation :

Cut the pointed end of the head of garlic, season it with 1/4 tablespoon of salt and pour a little olive oil. Wrap it in foil and bake for 30 minutes at 220 degrees. Once it is ready, wait for it to cool for 15 minutes, then remove and mash the cloves.

Put the potatoes (which you have previously peeled and cut), along with the remaining 3 tablespoons of sugar in a saucepan and cover with cold water. Put to boil at a moderate temperature for 25 minutes, until done. Squeeze them and return them to the pan and put them back on the hot plate. Cook for another 5 minutes until dry. Remove from the heat and transfer to a large container in which you are comfortable working.

Heat the butter and cream in a saucepan, being careful not to boil.

Start mashing the potatoes with a press until they are smooth airy, add the hot cream, egg yolks and roasted garlic. Stir again until a uniform smooth consistency is obtained.

Transfer the mixture to a pouch with a complicated suitable tip and make roses in a tray on baking paper (in the same way you would form sweet kisses). Bake the roses for 20-25 minutes until lightly browned. Serve them warm.
