Required products :

shank about 500 grams
100 grams of yellow cheese
2 eggs
100 grams of mayonnaise
salt and freshly ground black pepper to taste

Method of preparation :

Remove the bone, season the meat with salt and ground black pepper inside and out. Then spread it with mayonnaise and bake in a preheated oven to 170 degrees.
Meanwhile, beat the eggs with a wire for this purpose. Add the grated yellow cheese to them, mix until smooth.
40 minutes after the start of baking, remove the meat from the oven, wait for it to cool a bit (do not turn off the oven) and dip it in the yellow cheese dough. It should cover the entire surface, so if necessary, help yourself with a spoon.
Return the pork to the oven and let it bake for another 20 minutes.

A tender and juicy dish is obtained, because the yellow-egg mixture does not allow the meat juice to run out during cooking.

You can serve it alone or with a garnish of boiled rice, for example.
