How To Cook Baked Squid Potatoes - Recipe

Required products :

  • 500 grams of potatoes
  • 4 squid
  • 1 onion
  • 1/4 sweet pepper
  • 1 carrot
  • 1-2 cloves garlic
  • 3-4 sprigs of parsley (fresh)
  • 3 tablespoons vegetable oil
  • salt to taste
  • vinegar (wine or apple), you can use 2 tablespoons of lemon juice
  • 1 teaspoon oregano
  • 1 teaspoon coriander (ground)

 

Method of preparation :

Wash the squid well, clean them and scald with boiling water, then peel and cut the tail. Pour vinegar over the meat, sprinkle with spices and leave to marinate for 30-40 minutes.

 

Cut onions into semicircles, and potatoes, carrots and peppers - into thin straws (potatoes thinner than other vegetables).

 

 

Fry onions until transparent in oil, then add the strips of carrots and peppers, which are stewed over low heat until the carrots soften (stir during this time).

 

Remove the squid from the marinade, dry them and cut into circles.

 

Mix all products, pour 1 tablespoon of oil, sprinkle with oregano and salt and transfer to a pan, which is closed with a lid or cover with a sheet of aluminum foil.

 

 

Bake in the oven (preheat at 200 degrees) for 40-45 minutes.

 

At the end of cooking, sprinkle the dish with finely chopped garlic and parsley.
