How To Cook Baked Sweet Potatoes With Chickpeas And Tomatoes - Recipe

Required products :

4 sweet potatoes
1.5 teaspoon boiled chickpeas
1/2 tablespoon olive oil
pinch of coriander
pinch of red pepper
pinch of cumin
salt to taste
1/4 teaspoon chopped parsley
1/4 teaspoon chopped tomatoes
3 tablespoons lemon juice
1/4 teaspoon hummus
1 teaspoon dried dill
2 cloves garlic

Preparation :
Preheat the oven to 200 degrees. Cover the bottom of a suitable form with foil or baking paper.
Wash the potatoes thoroughly, cut them in half lengthwise and grease the slices with olive oil.
Arrange in the prepared dish with the cut side down.
Mix chickpeas with olive oil and spices, pour the aromatic combination in the pan with the potatoes and bake in the oven for about 20-25 minutes until golden.
Make a sauce by mixing the hummus with 1 tablespoon of lemon juice, dried dill and crushed garlic cloves.
Season to taste, add water if you prefer a more liquid consistency.
Add parsley and the remaining lemon juice to the chopped tomatoes, add salt if desired.
Remove the prepared potatoes to a plate, spread the chickpeas and vegetables on them, pour the sauce over them and serve.
