How To Cook Baked Sweet Potatoes With Figs And Yogurt - Recipe

Required products :

  • 2 large sweet potatoes, cut into 2 cm slices
  • 1/2 teaspoon olive oil
  • 200 grams of feta cheese or cow's cheese
  • 200 grams of yogurt - whole (or Greek)
  • lemon
  • 2 teaspoons finely chopped thyme plus a few serving leaves
  • 3 figs, each cut into 8 slices
  • 1 teaspoon pomegranate seeds
  • arugula for serving
  • balsamic reduction for serving

Method of preparation :

Arrange the potatoes on paper in a pan, pour olive oil over them and bake for 30-40 minutes until golden and crispy. Cool them.

Meanwhile, mash the cheese with a fork, add the milk and stir until a creamy texture is obtained. Cut a small lemon in half and squeeze the juice from it, do not overdo it. Add the thyme and a pinch of black pepper.

Spread the milk mixture on the potato slices and place a couple of figs, a few pomegranate seeds and thyme leaves on top.

Drizzle each bite with reduced balsamic vinegar and serve by scattering a few arugula leaves.
