How To Cook Baked White Beans With Tomatoes, Spinach And Olives - Recipe

Required products :

  • 500 grams of dry large white beans
  • 3-4 stalks of celery
  • 1 head old onion
  • 4-5 grains of black pepper
  • 1-2 well-ripened tomatoes, cut into circles
  • 3-4 tablespoons olive oil

 

For the sauce:

  • 1 small stalk of leek, finely chopped
  • 500 grams of spinach
  • link fresh beet leaves
  • 5 finely chopped green onion feathers
  • 1 chopped old onion
  • 1-2 cloves of garlic (chop them finely)
  • 1 sweet red pepper
  • 1 kg of fresh tomatoes, cut into small pieces
  • 1/2 bunch parsley
  • 1/2 bunch dill
  • 3/4 teaspoon olive oil
  • salt and freshly ground black pepper
  • olives as you wish

 

Method of preparation :

Pre-soak the beans in water, which then drain. Boil the beans until cooked together with the celery, the whole onion, add the peppercorns.

Once the beans soften, remove the vegetables and black peppercorns from the broth, strain the rest using a colander.

Make the sauce by first heating the olive oil in a saucepan and frying the leeks, both onions and garlic in it. Then add the chopped peppers and tomatoes, pour a little water and cook everything for 15-20 minutes.

It's time for the spinach leaves, which you also chopped, the beet leaves, add the dill and parsley. Let the sauce stay on the stove until all the products are soft.

Transfer the beans to a pan, pour the vegetable mixture over it and stir.

Arrange circles of tomatoes and olives on the surface, season, pour 3-4 tablespoons of olive oil.

Bake the dish at 200 degrees in the oven. About 40 minutes are enough. If necessary, pour a little of the water in which you boiled the beans.
