Required products :

  • 3/4 tea cup ground walnuts
  • 3/4 tea cup ground hazelnuts
  • 1/2 tea cup + 1/4 tea cup sugar
  • 1/4 cup ground powdered Jewish maca bread
  • 4 eggs, divided into whites and yolks, at room temperature
  • 1 banana - smeared
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

for cream:

  • 100 grams of chocolate
  • 2 tablespoons butter (can coconut oil or margarine)
  • 1 tablespoon orange juice

Method of preparation :

Turn on the oven to preheat to 160 degrees. Grease a square pan with 16 cm sides with fat of your choice - butter or oil.

In a bowl, combine the ground nuts and the Jewish bread, add salt.

In another bowl, beat the yolks with 1/2 teaspoon of sugar until the eggs turn lemon. Add the crushed banana and vanilla extract.

Separately, beat the egg whites with a little salt until a fluffy cream is obtained. It is important to use a completely clean and dry container and the mixer stirrers to be well washed and dried. Add the remaining quarter cup of sugar and continue to beat the egg whites until stiff peaks.

Combine the three mixtures, adding the nuts and proteins to the yolks in three parts, and stir after each mixture. Alternate, finishing with egg whites.

Pour the dough into the prepared pan and flatten with a spatula.

Bake for 35 minutes and check with a stick if the cake is ready, if it comes out clean, turn off the oven.

Cool the cake without removing it from the pan.

Put the chocolate, butter and orange juice in a saucepan and heat on low heat, stirring occasionally, until the chocolate melts.

Cool for 5 minutes, then pour the glaze over the cooled tray.
