How To Cook Banana Muffins With Coconut And Macadamia (Suitable For Paleo Diet) - Recipe

Have you ever had children eat a little banana and leave more than half because they don't want to eat more? And these remaining pieces of fruit have to be discarded because they quickly darken and spoil. One solution is to put them in a vacuum bag and put them in the freezer. So in time you will have collected enough to make these delicious and easy (and also compatible with the Paleo diet) banana muffins .

 

Required products :

  • 2/3 cup crushed raw macadamia nuts (Australian walnut)
  • 2/3 cup unsweetened coconut shavings
  • 1 cup peeled almond flour
  • 1/4 cup coconut flour
  • 3 ripe bananas, bleached and smeared
  • 2 eggs
  • 1/3 cup honey
  • 1/3 cup extra virgin coconut oil
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon liquid vanilla or vanilla powder

 

Method of preparation :

Preheat oven to 180 degrees.

Bake the macadamia nuts and coconut shavings on parchment paper in the oven until they start to brown (6 to 8 minutes). Stir the products every 2-3 minutes.

In a medium bowl, mix the almond flour, coconut flour, salt and baking soda. In a separate bowl, mix the eggs, mashed bananas, honey, coconut oil, lemon juice and vanilla.

Pour the liquid mixture over the dry one and mix well. Add the roasted macadamia nuts and coconut shavings.

Divide the finished dough into pre-greased muffin tins. Bake the mixture for approximately 30 minutes and then remove.
