How To Cook Barbecue: Marinated Chicken Steaks With Zucchini Salad - Recipe

Required products :

For the marinade :

  • 4 1/2 tablespoons white wine vinegar
  • 2 cloves garlic, pressed
  • 1 tablespoon cold pressed olive oil
  • 1 tablespoon Dijon mustard
  • 1 1/2 teaspoons sugar
  • 1 teaspoon salt
  • pepper

For the chicken steaks :

  • 750 grams of boneless leg steaks, skinless
  • 2 1/2 teaspoons mixture of dried herbs / basil, parsley, oregano, rosemary and thyme /
  • 1 teaspoon red pepper flakes / optional /

For the zucchini salad :

  • 1 tablespoon cold pressed olive oil
  • 2 zucchini, cut into thin slices
  • 2 tablespoons fresh mint leaves

Method of preparation :

  • Mix the marinade ingredients in a small jar, close tightly and shake vigorously.
  • Place the chicken steaks in a plastic bag with a closing mechanism and add 5 tablespoons of the marinade. Leave them to marinate for at least 20 minutes.
  • Light the barbecue and when it is ready to use, spread the chicken steaks on the grill.
  • Bake for about 3-4 minutes on each side until dark golden brown.
  • Transfer them to a plate, cover loosely with aluminum foil and let stand for about 10 minutes.
  • Meanwhile, make the zucchini salad by mixing them with fresh mint leaves and sprinkling with the remaining marinade.
  • Add 1 tablespoon of cold pressed olive oil and mix gently.
  • Serve the chicken steaks warm with the salad and toasted slices of bread.

Note!

You could prepare the steaks in a pan by heating 1/2 tablespoon of oil over medium heat and frying them for about 4-5 minutes on each side .
