Required products :

  • 2 1/2 teaspoons flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 280 grams of butter
  • 6 tablespoons cold water

Method of preparation :

Combine 2/3 of the flour with the sugar and salt in a food processor and mix with a few pulsations.

Cut the cold butter into cubes and add it to the robot and pulse again until you make crumbs of the mixture. Alternatively, you can use stretch marks between your fingers, but the goal is to keep the oil as cold as possible.

Add the remaining flour and make 5 pulsations again. Transfer the dough to a bowl.

Add the water and knead.

Divide the dough into 4 equal parts and wrap each in foil.

Refrigerate for 2 hours before use.

The resulting dough can be frozen and stored for up to 1 month, then leave in the refrigerator to relax before use.
